Meaty Pasta Casserols

OK so I'm coping off of Brianna! I've been meaning to post a few new recipes that I've been trying out lately. The best part about the new recipes is that they are quick and easy! We like that when I get home so late some nights. So tonight we tried Meaty Pasta Casseroles!!!

It was so good Calvin and I Loved it!! There is one good thing about this recipe, it makes 2 13x9 pans. So you make them both and then freeze one for up to 3 months, I liked that idea so in about a month you don't have to make dinner!!!! (It looks like a lot to do but it really isn't it's so easy)

Prep: 45min Bake: 25min
Meaty Pasta Casseroles
1 pkg. (16oz) penne pasta
1 lb. ground beef
1 lb. ground Italian sausage
1 cup fresh sliced mushrooms (optional)
1 med. chopped onion
1 chopped green pepper
2 cans (14 1/2oz) Italian diced tomatoes
1 jar (Prego) Italian Sausage and Garlic Sp. Sauce
1 jar (16oz) mild chunky salsa
1 8oz pkg. pepperoni, chopped
1 cup shredded Swiss Cheese
4 cups shredded Mozz. Cheese
1 1/2 cups shredded Parm. Cheese
1 jar Prego Three cheese Sp. sauce
I also added about 2tsp. of minced garlic

Cook pasta, meanwhile in Dutch oven cook the beef, sausage, mushrooms, onions, green peppers cook until meat is no longer pink (drain).

Drain pasta, and add to the meat mixture. Stir in the Tomatoes, Sausage and Garlic Spaghetti sauce, Salsa, and chopped Pepperoni.
Divide half on pasta mixture between 2 greased 13x9 baking dishes. Sprinkle each with 1/4 cup Swiss cheese, 1cup Mozz. cheese, 1/3 cup Parm cheese. Spread 3/4 cup Three cheese Spaghetti sauce. Top with remaining Pasta mixture and Three cheese Sp. sauce. Sprinkle with remaining cheeses.
Cover and Freeze one casserole for up to 3 months. Cover and bake remaining casserole at 350 for 25 min. Uncover and bake 10min. longer until cheese melts.

To use Frozen Casserole: Thaw in fridge overnight. Remove from the fridge 30min before baking. Cover and bake at 350 for 45min. Uncover bake 10min longer until cheese melts

Wow this looks so yummy minus the swiss cheese! Yes it's great when you can freeze one and eat one...I always always make two casseroles of lasagna when I am cooking or double the spagetti I'm making and always freeze the seconds! It's great for those nights I don't feel like cooking or have to fix something in a hurry!
